Cabbage Roll Soup

Slow cooker Cabbage Roll Soup

We are getting ready for fall and what better way to start it than with a hearty, flavor packed soup. Perfect for a week night meal that you can set and forget until it is time to eat. If you are not a cabbage fan I encourage you to try this, you might just change your mind.


  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves minced
  • 1/2 cup onion chopped
  • 1/2 cup shallots chopped
  • 2 lbs. lean ground beef
  • 1 tsp dried parsley
  • ½ tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 16 oz marinara sauce
  • 2 cups riced cauliflower
  • 5 cups beef broth
  • 8 cups cabbage sliced




  1. Heat olive oil and garlic on medium high heat
  2. Add onions and shallots and cook until softened
  3. Add ground beef and cook until browned
  4. Add parsley, oregano, salt and pepper and stir
  5. Stir in marinara sauce
  6. Add the riced cauliflower and stir well
  7. Pour your beef mixture in the slow cooker and add cabbage
  8. Stir to combine
  9. Cook on high for 3 hours or low for 6 hours


*No slow cooker, that’s okay. Just put mixture in dutch oven or soup pot and cook covered on simmer for about an hour or longer if preferred


*No cauliflower, substitute with 1 cup of rice


*Can substitute beef with, ground chicken, or turkey
